Broccoli Steak with Olive & Butter Bean Purée

A hearty, flavour-packed dish featuring roasted broccoli with a creamy, umami-rich purée.

- 1 whole head of broccoli
- 2 tbsp cumin
- 2 tbsp paprika
- Salt and pepper to taste
- ½ an avocado
- 1 tin of butter beans drained and rinsed
- 200 g green olives pitted
- 1 tbsp miso paste
- Olive oil
Blanch the whole head of broccoli by steeping it in boiling water to soften it slightly.
Once blanched, drizzle the broccoli with olive oil and season generously with cumin, paprika, salt, and pepper.
Place the seasoned broccoli in an air fryer or oven and roast until golden and slightly charred, bringing out its natural sweetness and deepening the flavour.
While the broccoli roasts, prepare the purée. In a blender, combine the butter beans, miso paste, avocado, and olives. Add a drizzle of olive oil and blend until smooth and creamy, adjusting the seasoning to taste.
To serve, spread a generous amount of the butter bean purée onto a plate. Place the roasted broccoli steak on top, allowing the smoky, spiced flavours to contrast beautifully with the creamy, umami-rich purée.
