Ingredients

  • 2 chicken breasts
  • 2 tbsp garlic and onion infused olive oil
  • 1 cup cooked brown rice
  • 1 cup cooked quinoa
  • ½ cup cherry tomatoes halved
  • ½ cucumber sliced
  • 1 shredded carrot
  • 1 cup Cos lettuce leaves
  • ¼ cup shredded purple cabbage
  • Salt and black pepper to taste
  • 1 tbsp extra virgin olive oil
  • Sauce of choice satay
  • Optional: beetroot sweet potato (roasted), spinach, celery, snow peas, baby beans, kale, silverbeet, legumes (chickpeas, kidney beans)

Instructions

  • Begin by heating the garlic and onion infused olive oil in a pan over medium heat. Once hot, add the chicken breasts and cook until golden and cooked through.
  • While the chicken is cooking, prepare the grains. Combine cooked brown rice and quinoa and place into a serving bowl.
  • Add the carrot, cucumbers, cherry tomatoes, cos lettuce, purple cabbage in the bowl.
  • Cut up the cooked chicken and place onto the bed of vegetables and grains.
  • Drizzle the satay sauce generously over the assembled bowl. Then finish with a light drizzle of extra virgin olive oil. Season with salt and black pepper to taste.
  • Mix the bowl slightly to distribute flavours, and serve immediately.
