Chicken Buddha Bowl

A wholesome and vibrant dish featuring chicken, whole grains, and seasonal vegetables, balanced with a nourishing sauce and a drizzle of olive oil.

- 2 chicken breasts
- 2 tbsp garlic and onion infused olive oil
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- ½ cup cherry tomatoes halved
- ½ cucumber sliced
- 1 shredded carrot
- 1 cup Cos lettuce leaves
- ¼ cup shredded purple cabbage
- Salt and black pepper to taste
- 1 tbsp extra virgin olive oil
- Sauce of choice satay
- Optional: beetroot sweet potato (roasted), spinach, celery, snow peas, baby beans, kale, silverbeet, legumes (chickpeas, kidney beans)
Begin by heating the garlic and onion infused olive oil in a pan over medium heat. Once hot, add the chicken breasts and cook until golden and cooked through.
While the chicken is cooking, prepare the grains. Combine cooked brown rice and quinoa and place into a serving bowl.
Add the carrot, cucumbers, cherry tomatoes, cos lettuce, purple cabbage in the bowl.
Cut up the cooked chicken and place onto the bed of vegetables and grains.
Drizzle the satay sauce generously over the assembled bowl. Then finish with a light drizzle of extra virgin olive oil. Season with salt and black pepper to taste.
Mix the bowl slightly to distribute flavours, and serve immediately.
