Emma’s ‘Margherita’ Pizza

A vegetable-enriched twist on the classic Margherita, featuring hidden veg in a tomato-based sauce to please both children and adults.

- 1 Lebanese pizza base
- 1 small red capsicum
- 2 small tomatoes
- 1 shredded carrot
- 200 g mozzarella cheese
Preheat the oven to 200°C. Prepare a baking tray by lining it with baking paper or lightly greasing it with olive oil.
Dice the red capsicum & tomatoes, and place in a blender with the shredded carrot. Drizzle some extra virgin olive oil over the top and blend the mixture to create a smooth sauce.
Spread the sauce evenly over the Lebanese pizza base, ensuring full coverage to the edges.
Grate or slice the mozzarella cheese and scatter it generously over the top of the sauce. Distribute the cheese evenly to ensure consistent melting and coverage across the pizza. Drizzle some extra virgin olive oil on top.
Place the pizza in the preheated oven and bake for 8–10 minutes, or until the cheese is fully melted and golden, and the base is crisp.
Remove from the oven and allow to rest for a few minutes before slicing. Serve warm.
