Ingredients

  • Extra virgin olive oil or butter
  • Bacon diced
  • Brown onion finely chopped
  • Garlic minced
  • Fresh mint leaves chopped
  • Green peas fresh or frozen
  • Goat cheese crumbled
  • Sea salt
  • Crusty bread to serve

Instructions

  • Begin by frying the diced bacon in a pan over medium heat and allow it to sizzle and render until slightly crisp and aromatic. Add a little butter to help grease the pan.
  • While the bacon cooks, finely chop the onion. Once the bacon is browned, add the onion, mint and garlic to the pan and sauté until softened and lightly golden. Stir and continue to cook briefly until fragrant.
  • Add the peas and stir well, allowing them to warm through and absorb the flavours of the bacon and aromatics.
  • Add a generous pinch of sea salt to enhance the sweetness of the peas. Allow the mixture to cook briefly, just until the mint is fragrant but still vibrant.
  • Remove the pan from the heat and crumble goat cheese over the top, allowing it to gently soften into the warm peas.
  • Serve immediately with crusty bread. This dish can stand alone as a light main course or be served as an elegant entrée.
