Prawn and Potato Stack

A refined yet simple dish combining prawns, potatoes, and fresh herbs to create elegant, flavourful patties.

- 3 medium potatoes approximately 600g, peeled, boiled and cut into chunks.
- 250 g fresh prawns peeled and deveined
- Zest of 1 lime
- ½ cup corn kernels lightly toasted
- 2 tablespoons fresh parsley finely chopped
- ½ teaspoon salt or to taste
- Olive oil for cooking
Place the potatoes in a mixing bowl. Add the lime zest, corn, chopped parsley and prawns to the potatoes. Season the mixture with salt and gently mix until the ingredients are evenly combined.
Shape the mixture into hand-sized patties. If preparing in advance, refrigerate the patties on a tray lined with baking paper until ready to cook.
Heat a little olive oil in a non-stick frypan over medium heat. Cook each patty for about 4 minutes per side, or until the prawns are cooked through and the patties are golden and lightly crisped on the outside.
Serve immediately while hot. These patties are ideal as a light meal or elegant starter, best accompanied by a fresh salad or citrus dressing.
