  • 1 packet Hakubaku Organic Udon Noodles
  • 800 g fresh seafood mix
  • 300 g cabbage cuts
  • 120 g carrot sliced 4cm x 2 cm
  • 150 g bean shoots
  • 80 g spring onion cut

Sauce

  • 60 ml soy sauce
  • 60 ml cooking sake
  • 20 g Japanese dashi powder

Garnish

  • Red pickled ginger beni shoga
  • Dried seaweed flakes ao nori
  • Bonito flakes

Instructions

  • Cook noodles by following the instructions on the package. Cool under running cold water, then drain and leave aside.
  • Spread sesame oil in a hot pan and cook vegetables to your liking.
  • Spread sesame oil in a hot pan and cook the seafood mix.
  • Add noodles, sauce ingredients, and approximately 100ml of the seafood juice from step 2. Cook the mixture until the noodles absorb the flavours.
  • Adjust flavour with salt and pepper then serve in a bowl with garnish.
