- 1 small head of radicchio torn into bite-sized pieces
- 2 ripe nectarines sliced
- 2 stalks of celery finely chopped
- ½ cup about 60g pecans, toasted
- 1 tablespoon honey
- 1 tablespoon red wine vinegar
Finely chop the celery to introduce a crisp, fresh, and watery burst, as well as a subtle salty element that complements the other ingredients.
Slice the nectarines, which add a sweet and juicy contrast to the bitterness of the radicchio, enhancing the overall flavour profile.
Prepare the radicchio by pulling off some leaves and chopping it, which will provide a slightly bitter note to the salad. Tear the leaves into bite-sized pieces to allow for easy mixing and eating. Roughly chop the pecans.
Combine the prepared radicchio, nectarines, celery, and pecans in a large bowl. Drizzle the honey and red wine vinegar over the salad and gently toss to evenly coat all the ingredients.
