Tomato Salad with Pesto Dressing

A fresh and vibrant salad showcasing a variety of tomatoes, complemented by a fragrant pesto dressing and perfect for any night of the week.

- 2 truss tomatoes
- 200 g cherry tomatoes
- 2 x 125g Tiny Toms or similar
- 1 small Spanish onion
- ½ cup basil
- 1 clove of garlic
- 3 tbsp toasted pine nuts
- ½ cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Thinly slice the truss tomatoes and halve the Cherry Burst tomatoes and Tiny Toms. Place into a mixing bowl.
Peel and thinly slice the Spanish onion into rings, then scatter them evenly over the tomatoes.
Using a food processor or blender, combine the basil, garlic, and pine nuts until coarsely chopped.
While the machine is running, slowly drizzle in the olive oil and lemon juice. Add salt and freshly ground pepper to taste and blend until the dressing reaches a smooth consistency.
Generously drizzle the prepared pesto dressing over the salad, ensuring an even coating across the ingredients.
Serve immediately, ideally accompanied by toasted ciabatta bread.
