Start your day with a boost of energy and flavor! This make-ahead Bircher Muesli is packed with wholesome ingredients and comes together in minutes. The perfect grab-and-go breakfast for busy mornings.

- 100 g oats
- 2 tbsp white chia seeds
- 1 tbsp pumpkin seeds
- 350 ml milk of your choice (I use almond or coconut)
- 50 ml maple syrup
- 30 ml all-natural vanilla extract
- 1 lemon
- 2 ripe pears
- 2 tsp ground cinnamon
The night before, put the oats, chia, and pumpkin seeds into a bowl or container, pour over the milk, and add the maple syrup, vanilla, and a squeeze of lemon juice. Mix well, then cover and pop into the fridge overnight.
In the morning, chop the pears into little chunks.
Add maple syrup to a hot pan. Add the pears, cinnamon, a pinch of salt, and a splash of vanilla extract.
Cook until pears are softened slightly and caramelised.
Place bircher muesli into a bowl, and top with caramelised pears.
