Citrus Infused Fried Olives

Green Sicilian and Kalamata olives are sautéed with garlic, bay leaves, chili, fennel, and orange for a warm, citrusy, and aromatic treat. Perfect for charcuterie boards or snacking!

Ingredients

  • 500 g mixed olives pips in
  • 2 garlic cloves
  • 2 fresh bay leaves
  • 1 orange peel and juice
  • 1 long red chilli
  • 1 tsp fennel seeds
  • Extra virgin olive oil
  • Sea salt flakes
  • Black pepper

Instructions

  • In a large fry pan, add a few tablespoons of extra virgin olive oil and allow to heat gently
  • Add the olives, and all the aromats, and allow to cook gently for 10 minutes to allow the olives to infuse with all the flavours
  • Add the orange juice, and season with a touch of salt and pepper
  • Serve warm on your next charcuterie platter
