Citrus Infused Fried Olives

Green Sicilian and Kalamata olives are sautéed with garlic, bay leaves, chili, fennel, and orange for a warm, citrusy, and aromatic treat. Perfect for charcuterie boards or snacking!

- 500 g mixed olives pips in
- 2 garlic cloves
- 2 fresh bay leaves
- 1 orange peel and juice
- 1 long red chilli
- 1 tsp fennel seeds
- Extra virgin olive oil
- Sea salt flakes
- Black pepper
In a large fry pan, add a few tablespoons of extra virgin olive oil and allow to heat gently
Add the olives, and all the aromats, and allow to cook gently for 10 minutes to allow the olives to infuse with all the flavours
Add the orange juice, and season with a touch of salt and pepper
Serve warm on your next charcuterie platter
