Ingredients
- 500 g mixed olives pips in
- 2 garlic cloves
- 2 fresh bay leaves
- 1 orange peel and juice
- 1 long red chilli
- 1 tsp fennel seeds
- Extra virgin olive oil
- Sea salt flakes
- Black pepper
Instructions
- In a large fry pan, add a few tablespoons of extra virgin olive oil and allow to heat gently
- Add the olives, and all the aromats, and allow to cook gently for 10 minutes to allow the olives to infuse with all the flavours
- Add the orange juice, and season with a touch of salt and pepper
- Serve warm on your next charcuterie platter
