Crispy Wasabi Prawn Sandwich

Indulge in these irresistible prawn cutlets, coated in crispy panko breadcrumbs and infused with the unique flavor of wasabi. A homemade wasabi tartar sauce and fresh cabbage slaw add the perfect finishing touch to this gourmet sandwich.

Main Ingredients
- 250 g raw prawns
- ¼ onion finely chopped
- 1 tablespoon cooking oil
- 1 tablespoon potato flour
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon S&B Wasabi Paste
- ½ cup flour
- 1 egg
- ½ cup Panko Breadcrumbs
- Oil for deep frying
Ingredients for Tartar Sauce
- 1 egg
- ¼ onion finely chopped
- 4 tablespoons mayonnaise
- ½ teaspoon S&B Wasabi Paste
- ¼ teaspoon salt
- ¼ teaspoon sugar
- ¼ teaspoon black pepper
- ¾ teaspoon rice wine vinegar
For assembly
- 4 pieces white bread
- 1 cup shredded cabbage
Place chopped prawns with sautéed onion, potato flour, salt, pepper and wasabi in a mixing bowl and mix them all until well incorporated.
Mash egg into fine crumbs. Add in all the tartar sauce ingredients and mix well. Set aside.
Set up a coating station of flour, beaten egg and panko. Coat prawn patties with flour then beaten egg followed by panko.
Heat up oil in a frying pan to 180°C and fry prawn patties one at a time until both sides turn golden brown. Drain oil and let them cool on a cooling rack.
Place one prawn patty on a slice of bread, top with shredded cabbage and tartar sauce and cover with another slice of bread.
