This quick and delicious Pad See Ew features tender chicken, crisp Chinese broccoli, and caramelized noodles in a savory, umami-packed sauce. A perfect homemade stir-fry!

Ingredients

  • 250 g wide rice noodles fresh or dry
  • 2 tbsp dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp caster sugar
  • 3 tbsp neutral oil
  • 3 garlic cloves
  • 150 g chicken thighs
  • 1 egg
  • 1 bunch Chinese broccoli

Instructions

  • Trim the ends of the Chinese broccoli and cut into 7.5 cm pieces. Separate the leaves from the stems, and slice any thick stems in half.
  • Heat 1 tablespoon of oil in a large, heavy-based skillet or wok over high heat.
  • Add garlic, and cook for 15 seconds. Add pork mince, and cook until it mostly changes from pink to white.
  • Add the Chinese broccoli, and cook until just wilted.
  • Mix in all the sauce ingredients and stir until the sugar has completely dissolved.
  • Push everything to one side, crack egg in and scramble
  • Place the noodles in the pan and stir briefly, just enough to spread the sauce and let the edges develop a caramelized texture, approximately 1 to 1 1/2 minutes.
  • Serve immediately!
