Ingredients
- 250 g wide rice noodles fresh or dry
- 2 tbsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp light soy sauce
- 2 tbsp rice wine vinegar
- 1 tbsp caster sugar
- 3 tbsp neutral oil
- 3 garlic cloves
- 150 g chicken thighs
- 1 egg
- 1 bunch Chinese broccoli
Instructions
- Trim the ends of the Chinese broccoli and cut into 7.5 cm pieces. Separate the leaves from the stems, and slice any thick stems in half.
- Heat 1 tablespoon of oil in a large, heavy-based skillet or wok over high heat.
- Add garlic, and cook for 15 seconds. Add pork mince, and cook until it mostly changes from pink to white.
- Add the Chinese broccoli, and cook until just wilted.
- Mix in all the sauce ingredients and stir until the sugar has completely dissolved.
- Push everything to one side, crack egg in and scramble
- Place the noodles in the pan and stir briefly, just enough to spread the sauce and let the edges develop a caramelized texture, approximately 1 to 1 1/2 minutes.
- Serve immediately!
