Quick, easy, and bursting with Mediterranean flavours, this pasta is sure to become a new family favourite!

- 2 packets of tomberry tomatoes
- 1 clove of garlic
- 3 anchovy fillets
- 1 onion – brown
- ½ bananaChilli optional
- 1 cup Parsley picked
- 2 cups penne pasta
- 1 tsp pepper and 1tsp salt
- 1 lemon juiced & zested
- 3 tbsp olive oil
- 100 g parmesan cheese
- Salt & Pepper to taste
Add pasta to salted boiling water, cook for 10-12 minutes or as per the pack instructions
Add oil, chilli and garlic to a hot pan. Cut up anchovy filets into small pieces, add to pan
Add zested lemon. Add lemon juice, salt and pepper.
Cook for 7-9 minutes on a medium heat until onions are soft
Drain the pasta and add it to the pan with the tomatoes, toss it through.
Plate and finish with parmesan cheese and parsley
