This Tortellini Soup is a hearty, flavorful bowl of comfort. Simmered chicken wings, fresh veggies, and Parmesan rinds create a rich, savory broth, while tender veal or beef tortellini add the perfect bite. A simple, yet satisfying dish that’s perfect for cozying up on chilly days.

- 400 g Tortellini pre-made Veal or Beef
- 4 chicken wings
- 12 black peppercorns
- 1 onion peeled and halved
- 1 carrot peeled
- 1 stick of celery
- 4 bay leaves
- 2 parmesan rinds
- 1 L Massel Chicken Stock
- Salt
- Olive Oil
Make the In brodo
In a large pot, heat a splash of olive oil over medium heat. Add the chicken wings and brown them on all sides to develop flavour. Once browned, add the peppercorns, onion, carrot, and celery. Sauté for a few minutes until softened.
Add the bay leaves, and parmesan rinds to the pot. Pour in the chicken stock, and bring to a boil. Once boiling, reduce the heat to a simmer. Let the broth cook for about 30 minutes to allow the flavours to meld together.
Allow the broth to cool slightly, then remove the chicken bones and vegetables and pass through a sieve. Reserve to one side
