Ingredients
- 400 g Tortellini pre-made Veal or Beef
- 4 chicken wings
- 12 black peppercorns
- 1 onion peeled and halved
- 1 carrot peeled
- 1 stick of celery
- 4 bay leaves
- 2 parmesan rinds
- 1 L Massel Chicken Stock
- Salt
- Olive Oil
Instructions
Make the In brodo
- In a large pot, heat a splash of olive oil over medium heat. Add the chicken wings and brown them on all sides to develop flavour. Once browned, add the peppercorns, onion, carrot, and celery. Sauté for a few minutes until softened.
- Add the bay leaves, and parmesan rinds to the pot. Pour in the chicken stock, and bring to a boil. Once boiling, reduce the heat to a simmer. Let the broth cook for about 30 minutes to allow the flavours to meld together.
- Allow the broth to cool slightly, then remove the chicken bones and vegetables and pass through a sieve. Reserve to one side
Cook Tortellini
- Bring water to a boil in a saucepan and add the tortellini. Cook according to package instructions (usually about 2-3 minutes for pre-made tortellini).
To serve
- Add tortellini to a bowl and cover with the In brodo. Add freshly ground black pepper. and serve immediately.
