To make the broth, use the scraps of the spring onions and ginger, add to a pot, and add the stock, then bring to a boil. Boil for 10 minutes, then season with soy sauce
meanwhile, boil the dumplings and noodles in boiling salted water
Serve in a bowl, with spring onions on top
