Bright, zesty, and refreshing! This vibrant salad combines citrus, fresh herbs, and a kick of chili with nutty sesame seeds and a tangy grapefruit-soy dressing. Perfectly light and delicious!

- 1 pack of soba noodles
- 1 punnet of perfection quekes
- 1 orange
- 1 pink grapefruit
- 1 mandarin
- 2 spring onion stems
- ½ bunch fresh coriander
- ½ bunch fresh mint
- 1 chilli
- 3 tablespoons sesame seeds.
Dressing
- 1/2 cup grapefruit juice
- 1 orange zest only
- 2 tbs soy suce
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 1 tbsp brown sugar
Dressing
Combine the dressing ingredients into a small mixing bowl and mix well.
Cook the soba noodles according to the packet instructions.
Add the soba noodles to the salad bowl. Add the dressing and toss using your nads until all of the ingredients are combined.
Serve immediately.
