Ingredients
- 1 pack of soba noodles
- 1 punnet of perfection quekes
- 1 orange
- 1 pink grapefruit
- 1 mandarin
- 2 spring onion stems
- ½ bunch fresh coriander
- ½ bunch fresh mint
- 1 chilli
- 3 tablespoons sesame seeds.
Dressing
- 1/2 cup grapefruit juice
- 1 orange zest only
- 2 tbs soy suce
- 1 tbsp fish sauce
- 1 tbsp rice wine vinegar
- 1 tbsp brown sugar
Instructions
Salad
- Cut all of the salad ingredients into small sizes, even pieces and place them into a mixing bowl.
Dressing
- Combine the dressing ingredients into a small mixing bowl and mix well.
- Cook the soba noodles according to the packet instructions.
- Add the soba noodles to the salad bowl. Add the dressing and toss using your nads until all of the ingredients are combined.
- Serve immediately.
