Ingredients

  • 1 pack of soba noodles
  • 1 punnet of perfection quekes
  • 1 orange
  • 1 pink grapefruit
  • 1 mandarin
  • 2 spring onion stems
  • ½ bunch fresh coriander
  • ½ bunch fresh mint
  • 1 chilli
  • 3 tablespoons sesame seeds.

Dressing

  • 1/2 cup grapefruit juice
  • 1 orange zest only
  • 2 tbs soy suce
  • 1 tbsp fish sauce
  • 1 tbsp rice wine vinegar
  • 1 tbsp brown sugar

Instructions

Salad

  • Cut all of the salad ingredients into small sizes, even pieces and place them into a mixing bowl.

Dressing

  • Combine the dressing ingredients into a small mixing bowl and mix well.
  • Cook the soba noodles according to the packet instructions.
  • Add the soba noodles to the salad bowl. Add the dressing and toss using your nads until all of the ingredients are combined.
  • Serve immediately.
