Ingredients
- 500 g pack Risoni pasta
- 500 g Italian pork and fennel sausages
- 1 red onion
- 2 garlic cloves
- 2 400g tin chopped italian tomatoes
- Sea salt flakes
- Extra virgin love oil
- Black pepper

Instructions
- Start by putting a pot of water on high heat. Once it’s boling, add salt, and the Risoni and cook to the packet instructions.
- In a heavy-pan, fry the onion and garlic until soft and fragrant in extra virgin olive oil. Then, remove the sausages from their casings and fry them in the onion mixture until broken up and golden, breaking them into small mince-like pieces.
- Add the tinned tomatoes, salt and pepper, and allow to bubble away for 20-30 minutes on a medium heat until reduced
- Stir the cooked Risoni through the sauce, with some reserved cooking water
- Serve with grated Parmigiano cheese
