A beloved Australian-Chinese appetiser, prawn toast features a savoury seafood paste spread on white bread, crisp-fried to perfection and served with a touch of sweet chilli.

Ingredients
- 200 g peeled and deveined raw prawns
- 100 g white-fleshed fish such as barramundi
- 1 egg
- 1 tsp sugar
- 1 tbsp sesame oil
- 5 thick slices white bread
- 1 cup white and black sesame seeds
- Sunflower oil to fry
- Sweet chilli sauce to serve
Instructions
- Begin by combining the prawns and white-fleshed fish in a food processor. Add the whole egg, sugar, garlic (optional), and sesame oil. Blend the mixture until a smooth seafood paste is formed.
- Lay out the slices of white bread. Spread a spoonful of the seafood paste evenly over each slice, creating a layer approximately 1 cm thick. Using the back of a spoon, smooth the paste to the edges to ensure full coverage.
- Pour the sesame seeds onto a flat plate. Press the paste-coated side of each slice gently into the seeds until well covered. Cut each slice in half to form rectangles or triangles, as preferred.
- Heat sunflower oil in a frying pan over medium-high heat. Once hot, fry the prawn toasts in batches, starting with the sesame seed side down. Cook until golden brown, then flip and fry the other side until evenly crisped.
- Drain the prawn toasts on paper towel. Serve warm with sweet chilli sauce on the side. Sriracha or soy sauce may be offered as alternatives.
