Emergency Lemon Mug Cake

Ingredients:

  • 20g Butter
  • 1 Lemon, zest and juice
  • 15g Stevia
  • 50g Almond meal
  • 1 egg

Method:

  • Choose your mug. Melt butter in mug in microwave, and then remove it from microwave.
  • Using a fork, thoroughly combine all other ingredients in the same mug.
  • Cook in microwave on high/ default setting for 1.5 minutes, cake may need up to 2 minutes.
  • Serve with cream or ice cream if desired
