Serves 4 | Prep time: 5 mins | Cook time: 20 mins.

Vegetarian, low lactose, gluten free, nut free.


  • 1/3 cup basmati rice
  • 2 Glucerna RTD
  • 1 tsp vanilla extract
  • ¼ tsp cinnamon
  • 1 tbsp maple syrup
  • ¼ cup sultanas
  • ¼ cup thickened cream


  1. In a medium pot, bring the rice, Glucerna RTD, vanilla extract, cinnamon and maple syrup to a boil over medium heat. Reduce the heat to a gentle simmer and cook for 20 minutes, or until the rice is tender. Stir frequently to avoid the rice from sticking to the pot. 
  2. Remove pot from heat and stir through sultanas and thickened cream.
  3. Transfer mixture to a bowl and refrigerate for 1 hour. The pudding will thicken as it cools. 

Serve cold or warm.
