Vegetarian, low lactose, gluten free, nut free.
- 1/3 cup basmati rice
- 2 Glucerna RTD
- 1 tsp vanilla extract
- ¼ tsp cinnamon
- 1 tbsp maple syrup
- ¼ cup sultanas
- ¼ cup thickened cream
- In a medium pot, bring the rice, Glucerna RTD, vanilla extract, cinnamon and maple syrup to a boil over medium heat. Reduce the heat to a gentle simmer and cook for 20 minutes, or until the rice is tender. Stir frequently to avoid the rice from sticking to the pot.
- Remove pot from heat and stir through sultanas and thickened cream.
- Transfer mixture to a bowl and refrigerate for 1 hour. The pudding will thicken as it cools.
Serve cold or warm.
