Pastry
- 1 1/4 cup plain flour
- Salt
- 1 tsp cinnamon
- 1/4 cup caster sugar
- 1 tsp baking powder
- 1 lemon zested
- 125 g butter
- 1 egg yolk
- 2 tsp dry sherry or brandy - SEPPELTSFIELD PORT
- Filling
- 2 granny smith apples
- 3 eggs
- 3/4 cup caster sugar
- 3 tbsp plain flour
- 3 tsp lemon zest
- 3/4 cup cream
- 375 g philly cream cheese 1/4 cup sultanas
- Salt
Instructions
Pastry
- Sift together dry ingredients and place into a food processor with butter and blitz until a fine breadcrumb like consistency forms.
- Add the egg yolk and the sherry and blitz until the pastry comes together.
- Roll out and lune a lamington tin at 28cm x 18cm
Filling
- Peel and core the apples, and thinly slice, then arrange over the pastry.
- Beat the eggs and sugar until thick, then mix in the remaining ingredients
- Pour over the apples and bake at 170 for an hour
- Serve with thick dollop cream and cinnamon
