Ingredients
- 500 g potatoes
- 100 g unsalted butter
- 50 ml extra virgin olive oil
- Sea salt flakes
- Black pepper
Instructions
- Preheat the oven to 200°C. Blanch the potatoes until they are soft to the touch. Drain the water and let it dry.
- Once the potatoes are dried completely and cool to the touch, arrange them on a tray, ideally with the skin side facing up.
- Using the back of a bowl, a pot, your hand, or a glass, gently press each potato to flatten them.
- With the potatoes smashed, generously smother them with softened unsalted butter and drizzle liberally with extra virgin olive oil. Ensure every surface is coated well, as the fat content contributes to their final crispiness.
- Season the potatoes with a generous amount of sea salt flakes, covering them evenly. The salt not only enhances flavour but also aids in crisping the exterior.
- Place the tray in the preheated oven and roast the potatoes for 30 to 40 minutes, or until deeply golden and exceptionally crisp on the outside.
