Ingredients
- 2 chicken breasts
- 2 tbsp garlic and onion infused olive oil
- 1 cup cooked brown rice
- 1 cup cooked quinoa
- ½ cup cherry tomatoes halved
- ½ cucumber sliced
- 1 shredded carrot
- 1 cup Cos lettuce leaves
- ¼ cup shredded purple cabbage
- Salt and black pepper to taste
- 1 tbsp extra virgin olive oil
- Sauce of choice satay
- Optional: beetroot sweet potato (roasted), spinach, celery, snow peas, baby beans, kale, silverbeet, legumes (chickpeas, kidney beans)
Instructions
- Begin by heating the garlic and onion infused olive oil in a pan over medium heat. Once hot, add the chicken breasts and cook until golden and cooked through.
- While the chicken is cooking, prepare the grains. Combine cooked brown rice and quinoa and place into a serving bowl.
- Add the carrot, cucumbers, cherry tomatoes, cos lettuce, purple cabbage in the bowl.
- Cut up the cooked chicken and place onto the bed of vegetables and grains.
- Drizzle the satay sauce generously over the assembled bowl. Then finish with a light drizzle of extra virgin olive oil. Season with salt and black pepper to taste.
- Mix the bowl slightly to distribute flavours, and serve immediately.
