Prawn and Potato Stack

Prawn and Potato Stack

Ingredients
- 3 medium potatoes approximately 600g, peeled, boiled and cut into chunks.
- 250 g fresh prawns peeled and deveined
- Zest of 1 lime
- ½ cup corn kernels lightly toasted
- 2 tablespoons fresh parsley finely chopped
- ½ teaspoon salt or to taste
- Olive oil for cooking
Instructions
- Place the potatoes in a mixing bowl. Add the lime zest, corn, chopped parsley and prawns to the potatoes. Season the mixture with salt and gently mix until the ingredients are evenly combined.
- Shape the mixture into hand-sized patties. If preparing in advance, refrigerate the patties on a tray lined with baking paper until ready to cook.
- Heat a little olive oil in a non-stick frypan over medium heat. Cook each patty for about 4 minutes per side, or until the prawns are cooked through and the patties are golden and lightly crisped on the outside.
- Serve immediately while hot. These patties are ideal as a light meal or elegant starter, best accompanied by a fresh salad or citrus dressing.
