Sausages with Roasted Potatoes and Lemon
A simple and wholesome family dish featuring oven-roasted potatoes and locally sourced pork and beef sausages, infused with the bright flavour of organic lemon and herbs.

Ingredients
- 6 pork and beef sausages approx. 500g
- 4 medium potatoes peeled and halved
- 1 tablespoon olive oil
- 1 teaspoon sea salt
- ½ teaspoon cracked black pepper
- 1 organic lemon sliced
- 1 teaspoon fresh thyme leaves or ½ teaspoon dried thyme
Instructions
- Boil the peeled and halved potatoes in hot water for approximately 30 minutes or until slightly softened but not falling apart. Drain and allow them to steam dry for a few minutes.
- Place the boiled potatoes in a stainless steel bowl and gently break them apart to increase surface area, enhancing crispness during cooking. Drizzle with olive oil, and season with sea salt, cracked black pepper, lemon, rosemary and thyme. Toss to coat evenly.
- Arrange the seasoned potatoes in a single layer in an air fryer basket or on a baking tray if using an oven.
- Distribute lemon slices evenly across the top of the potatoes to allow their oils and juices to infuse the dish during roasting.
- Preheat the air fryer or oven to 200°C. Place the sausages alongside the potatoes. Roast in the air fryer for approximately 15–20 minutes or until the sausages are cooked through and the potatoes are golden and crisp. If using a conventional oven, cook for approximately 45–60 minutes, turning once halfway through.
- Carefully remove the tray or basket from the oven or air fryer. Plate the potatoes and sausages, with a slice of the lemon as garnish and serve immediately.
