Ingredients
- 2 truss tomatoes
- 200 g cherry tomatoes
- 2 x 125g Tiny Toms or similar
- 1 small Spanish onion
- ½ cup basil
- 1 clove of garlic
- 3 tbsp toasted pine nuts
- ½ cup olive oil
- 2 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Thinly slice the truss tomatoes and halve the Cherry Burst tomatoes and Tiny Toms. Place into a mixing bowl.
- Peel and thinly slice the Spanish onion into rings, then scatter them evenly over the tomatoes.
- Using a food processor or blender, combine the basil, garlic, and pine nuts until coarsely chopped.
- While the machine is running, slowly drizzle in the olive oil and lemon juice. Add salt and freshly ground pepper to taste and blend until the dressing reaches a smooth consistency.
- Generously drizzle the prepared pesto dressing over the salad, ensuring an even coating across the ingredients.
- Serve immediately, ideally accompanied by toasted ciabatta bread.
