Ingredients:

  • 700ml Bottle Passata
  • 450gm of Pork Mince (Beef Mince or a combination of both will work too)
  • 2 x 500gm packets of bucatini dry pasta
  • 1 x onion
  • 1 x carrot
  • 2 x cloves of garlic
  • 1 x stick of celery
  • 1 x stick of rosemary
  • 1 x cup of red wine
  • Olive Oil

Method:

  1. Chop all vegetables into a fine dice.
  2. Add a good glug of olive oil to a hot heavy base pot.
  3. Reduce heat to medium and add in carrot, stir for 1 minute.
  4. Add celery to the pan, stir for 1 minute.
  5. Add Onion and Garlic to the pan and stir all vegetables for 3-5 minutes until onion is translucent.
  6. Add in mince, break up and cook until brown.
  7. Add in red wine, stir for 3 minutes.
  8. Add in Passata and fill ½ of the bottle with water and add.
  9. Cook at a simmer for 30 minutes, stirring every 5 minutes.
  10. 10 minutes before the sauce is ready, add pasta to a large pot of boiling water and cook to the packet instructions.
  11. Serve sauce on top of a bed of pasta.
