Tuna Song with Yuzu Dressing
Khanh OngIngredients:
- 2 tbsp yuzu juice
- 2 tbsp grapeseed oil
- 1 tbsp mirin
- 1 tsp soy sauce
- 1⁄2 long red chilli finely chopped
- 1 tsp sesame oil
- 1⁄2 thumb size piece of ginger finely julienned
- A pinch of salt
To Serve (Garnish):
- 250g sashimi grade tuna thinly sliced
- Toasted black sesame
- 1 tsp chives
- ½ a brunoise avocado
Method:
- Mix all yuzu dressing ingredients
- Plate tuna with dressing and garnish
