Alcoholic Kombucha Poached Pears with Chocolate Soil

Ingredients:

Poach Pears

  • 3 pears peeled and cored
  • 250ml Alcoholic Kombucha
  • 1 Cinnamon
  • 1 Orange, juice and strips zested
  • 1 star anise
  • a pinch of salt

Chocolate Soil

  • 160g sugar
  • 50 ml water
  • 70g dark chocolate finely chopped
  • 50g crushed walnuts
  • a pinch of salt

Method:

Poach Pears

  1. Place all the ingredients into a small pot and bring to a simmer for 20-25 mins until pears are soft.
  2. Remove pears and set aside.
  3. Strain liquid and place back onto heat until reduced by 2/3rds

Chocolate Soil

  1. In a non reactive pan bring the sugar and water to 135C
  2. Add the chocolate in and whisk vigorously
  3. Add walnuts and salt

To Serve:

  1. Vanilla bean ice-cream
