- 125g Streaky Bacon, rind off
- 1 tbsp Balsamic vinegar
- 1 tsp Extra virgin olive oil
- 1 tsp Garlic, chopped
- 2 tbsp Sugar, granulated
- 85g Onions, diced
- 60ml Water
- 1 tbsp Tomato puree
- Add oil to medium hot pan
- Add bacon, sweat down
- Add onion and garlic and continue to cook
- Add tomato puree and cook out until starting to catch
- Add sugar, balsamic and water, cook out to reduced and jam consistency
