BBQ ScallopsLaura Sharrad
- 1 dozen albacore scallops
- 200g butter
- 3 cloves garlic
- 1 long red chilli
- 1/4 bunch parsley
- 1/4 bunch dill
- 1 tbsp capers
- 1 red shallot
- Black pepper
- 2 lemons
- Blitz the butter with the garlic, capers, shallot, chilli, 1/2 of the parsley and 1/2 of the dill until whipped. Season with salt and pepper
- Place the scallops on the bbq, and spoon a tsp of butter over each scallop.
- Once cooked, serve immediately and squeeze over some lemons & top with extra herbs
