Beef Tataki with Nuoc Mam Dressing

Ingredients:

  • 250g sirloin steak
  • 1 tbsp EVOO
  • 2 tsp togarashi
  • pinch of salt

Garnish

  • Nuoc mam dressing
  • 1 red radishes julienned
  • Micro shiso/ shiso / tips of Vietnamese Mint
  • Togarashi (pinch)
  • ½ tsp fried shallots
  • 1 tbsp edamame
  • 1 tsp chives

Method:

  1. Brush the steak with EVOO and cover with togarashi and salt
  2. pour the leftover EVOO into a hot pan and sear the steak for 1 minute on all sides.
  3. rest for 2 minutes and then thinly slice
