- Cut a broccoli steak from the head of broccoli and then oil + season it before placing it on the grill. Charring on both sides.
- Take the rest of the broccoli and shave the top with your knife to make the base of your tabbouleh. Place in a mixing bowl.
- Dice up one long red chilli and add to the broccoli, followed by some sliced red onion, a segmented orange, chopped cucumber and then dress with lemon juice and olive oil. Give it a good toss.
- Cut your squid into rings, then coat it in olive oil before placing it on a hot grill. They should only take 2 mins to cook.
- Time to plate – Broccoli steak down first, followed by the tabbouleh, squid and top with feta.
