Burrata & Sugo Pasta

Ingredients:

  • Burrata
  • Linguine 
  • Basil
  • 1 tin of diced tomatoes
  • ½ onion, diced
  • Olive Oil
  • Salt 
  • Pepper

Method:

  1. Get a pot of water boiling for your pasta, be sure to salt the water. 
  2. Add half a diced onion to a pan with olive oil on medium heat, then add pinch of salt & pepper.
  3. Once the onions have sweated down, add in your tin of tomatoes and tear up some basil and stir through. Leave to simmer for 15 mins and then season to taste.
  4. Now cook your pasta according to the packet in the boiling water.
  5. When the pasta is ready add it straight into the pan with the sugo, along with a scoop or two of pasta water and toss together.
  6. Gently place the burrata on top and dress with a lick of olive oil, salt and pepper and garnish with more fresh basil leaves.
