Ingredients:
- 200g Plain Flour
- 120ml Buttermilk
- 100g Caster Sugar
- 1 Egg, beaten
- ½ Tsp Baking powder
- 1 Tsp Vanilla bean paste
- 200ml Thicken cream
- 75ml Maple syrup
- For Blueberry compote
- 2 punnets Blueberries
- 100g Caster sugar
- ½ lemon juice
Method:
- Whisk together your egg, and buttermilk together before adding your sugar, followed by the vanilla. Beat together until nice and fluffy. Start adding your flour and beat together before adding lastly the baking powder.
- For the compote, add your blueberries and sugar to a hot pan and cookout for a few minutes adding your lemon juice and cooking out before taking off and leaving to cool and firm up.
- Whip your cream and set it to one side.
- Put your pancake pan on the heat, over medium heat and start cooking your batter until they are all done.
- Create your stack and add your cream, couli and finish with maple syrup.
