Chocolate Mousse
Joel FerrenIngredients:
- 150g milk chocolate
- 25g butter
- 1⁄2 cup Chocolate Ensure
- 3 eggs, separated, at room temperature
- 1 tsp vanilla extract
- 300ml thickened cream
Method:
- Melt the chocolate and butter in a heatproof bowl over a saucepan of simmering water, stirring regularly. Set aside to cool for 5 minutes.
- Add egg yolks and vanilla extract to chocolate mixture and gently combine.
- Use an electric beater to beat cream.
- Gently fold the cream and the chocolate mixture until it’s combined.
- Use an electric beater to beat the egg whites until soft peaks form.
- Fold the egg white into the chocolate mixture followed by the Ensure powder.
- Place in fridge for 3-4 hours or until set.
- Serve with mixed berries
