- 1 tbsp Turmeric, freshly grated
- 1 tbsp Ginger, freshly grated
- 250ml Water
- 250ml Oat milk
- 300ml Coconut milk
- 200g Rolled oats
- 2 tbsp Coconut sugar
- Pinch Salt
- 1 tsp Cinnamon, ground
- 1 Banana, sliced
- 2 Passionfruit, halved and seeds scooped
- 4 tbsp Coconut, fresh grated or shaved
- Grate the fresh turmeric and ginger into the water and leave to stand for 15 minutes to infuse or cold infuse in the fridge overnight.
- Place the turmeric & ginger infusion with the oat milk, coconut milk, rolled oats and coconut sugar into a saucepan and place onto a low to medium heat.
- Gently stir and heat the mixture to a simmer and cook for 6-8 minutes or until the mixture thickens.
- Remove from the heat and stir in the salt, divide the mixture into four bowls and top with fresh banana, passion fruit seeds, fresh grated or shaved coconut and a light dust of cinnamon powder.
