This recipe is brought to you with the help of our friends at Ocean Spray


  • 1 bag of craisins
  • Pistachios 
  • 3 Egg Whites
  • 150g Caster sugar
  • 1 tablespoon of cinnamon 
  • 1 ½ cups flour


  1. Whisk together sugar and whites in a mix to form your meringue base. Continue whisking until you have stiff peaks.
  2. Now fold in cinnamon and flour (half at a time), followed by your pistachios and craisins.
  3. Transfer the mixture into a lined loaf tin and then into a 180 degree and bake until a skewer comes out clean.
  4. Let the loaf completely cool before removing it from the loaf tin and transferring it to your cutting board.
  5. Slice the loaf into 1cm thick pieces and then place them on a lined baking tray.
  6. Place back into the oven for 6-8 mins or until golden and crispy all over.
  7. Enjoy with a cup of coffee.
