Craisin & Pearl Couscous Salad

  • 5 cups of pearl couscous
  • 1L veg stock
  • 2 tbsp zaatar
  • 1 tsp chilli flakes
  • ½ head cauliflower
  • 1 lebanese cucumber
  • 1 bunch spring onions
  • ½ bunch coriander’
  • ½ parsley
  • ½ cup walnuts
  • ½ cup of craisins
  • ¼ cup apple cider vinegar
  • ¼ cup olive oil
  • Thumb of horseradish


  1. Cook down cauliflower for 15 mins with zaatar until soft.
  2. Boil pearl couscous for 15 mins until stock has been absorbed or cooked through.
  3. Chop up all of your herbs, nuts and veg, so they are ready to mix in.
  4. For dressing, combine apple cider, vinegar, oil, grated horseradish and salt.
  5. Bring together everything including craisins in a big mix bowl and mix.
  6. Ready to serve.
