Craisin & Pearl Couscous Salad

Ingredients:
- 5 cups of pearl couscous
- 1L veg stock
- 2 tbsp zaatar
- 1 tsp chilli flakes
- ½ head cauliflower
- 1 lebanese cucumber
- 1 bunch spring onions
- ½ bunch coriander’
- ½ parsley
- ½ cup walnuts
- ½ cup of craisins
- ¼ cup apple cider vinegar
- ¼ cup olive oil
- Thumb of horseradish
Method:
- Cook down cauliflower for 15 mins with zaatar until soft.
- Boil pearl couscous for 15 mins until stock has been absorbed or cooked through.
- Chop up all of your herbs, nuts and veg, so they are ready to mix in.
- For dressing, combine apple cider, vinegar, oil, grated horseradish and salt.
- Bring together everything including craisins in a big mix bowl and mix.
- Ready to serve.
