Cucumber and Mint Raita

Ingredients:

  • 1 telegraph cucumber, grated, squeezed and well drained
  • 1 bunch mint, leaves only, finely chopped
  • 250g Greek or natural yoghurt
  • ½ tsp salt, Murray River pink
  • Optional- 1 green chili, deseeded, finely chopped

Method:

  1. Prepare the raita by combining all ingredients in a bowl, set aside to serve.
