Great Nonna Maria’s Sfinci

Ingredients:

  • 2 eggs
  • 2cups of water
  • Rind of approx 1 lemon
  • 3 tsp vanilla essence
  • 3 cups self raising flour
  • 1/3 cup of caster sugar
  • 240g fresh ricotta cubed small
  • Vegetable oil for frying
  • Caster Sugar & cinnamon for coating

Method:

  1. Whisk eggs until fluffy.
  2. Add 2 cups of water, lemon rind, vanilla essence & keep whisking.
  3. Add self raising flour & caster sugar & mix until well combined.
  4. Add ricotta & mix into batter.
  5. Rest for 15 mins.
  6. Fry in vegetable oil until golden rest on paper towels & coat in sugar cinnamon mix as you do your batches.
