Japanese Style Simmered Pork Belly (Buta no Kakuni)

Ingredients:
- 480g pork belly, cut into 5cm cubes of 8
- 80ml vegetable oil
- 25g ginger, sliced
- 1/4 leek stalk
- 1 tbsp uncooked rice
- 1L water
Sauce
- 50ml Obento Sushi & Sashimi Soy Sauce
- 25ml Obento Mirin Seasoning
- 200ml Obento Cooking Sake
- 50g sugar
- 800ml water/dashi stock
Garnish
- Boiled egg
- Pumpkin
- Carrot
Method:

- Sear the pork belly on all sides in a hot pan.
- Wipe off the excess fat from the pork belly. Place in a pot with ginger, leek, rice, and water. Cover with a lid and bring to boil. Reduce heat to low and continue to simmer for 2 hours.
- Take out the pork belly and wash it with cold water. Dry and keep aside.
- Combine sauce ingredients in a pot. Add the pork from step 3, cover with a lid and bring to boil. Reduce heat to low and continue to simmer for 1 hour.
- Serve with desired garnish.
