King Fish Song with Tamarind Dressing

Khanh Ong

Ingredients:

  • 200g Fresh Sashimi Grade Kingfish
  • 1 tbsp tamarind pulp
  • 150ml warm water
  • 50g caster sugar
  • 2 birdseye chili
  • 3 kaffir lime leaves
  • 2 garlic cloves
  • 30ml fish sauce
  • 2 finger limes (optional)
  • 2 tsp roasted peanuts
  • 2 tsp fried shallot

Method:

  1. Thinly slice the kingfish and place on 2 serving platters
  2. combine tamarind and water
  3. in a mortar and pestle ground up chilli, lime leaves, garlic and fish sauce
  4. add 150ml of the tamarind water strained into the mortar and pestle
  5. coat kingfish with dressing
  6. scatter fried shallots and peanuts and garnish with coriander leaves

Optional

  1. cut open finger limes and add lime caviar over dish
