King Fish Song with Tamarind Dressing
Khanh OngIngredients:
- 200g Fresh Sashimi Grade Kingfish
- 1 tbsp tamarind pulp
- 150ml warm water
- 50g caster sugar
- 2 birdseye chili
- 3 kaffir lime leaves
- 2 garlic cloves
- 30ml fish sauce
- 2 finger limes (optional)
- 2 tsp roasted peanuts
- 2 tsp fried shallot
Method:
- Thinly slice the kingfish and place on 2 serving platters
- combine tamarind and water
- in a mortar and pestle ground up chilli, lime leaves, garlic and fish sauce
- add 150ml of the tamarind water strained into the mortar and pestle
- coat kingfish with dressing
- scatter fried shallots and peanuts and garnish with coriander leaves
Optional
- cut open finger limes and add lime caviar over dish
