Kingfish with Orange and Orange and Olive Oil Cake

Ingredients:

Olive Oil Cake

  • Sugar 300g
  • Eggs 3pcs
  • Milk 250g
  • Extra Virgin olive oil 250g
  • Orange juice + zest 3pcs
  • Flour 300g
  • Baking powder 15g

Kingfish with Orange

  • 200g kingfish sliced
  • 75ml orange juice
  • 1 tbsp olives, sliced
  • 1 spring onion, finely sliced
  • 1 green chili, sliced
  • 1 tbsp coconut vinegar

To serve

  • Fresh herbs, dill & mint

Method:

Olive Oil Cake

  1. Whisk sugar and eggs until fluffy. 
  2. Add in milk, olive oil, orange juice and zest alternately with dry ingredients.
  3. Bake at 160⁰c for 30 minutes.
  4. Optional: glaze with icing sugar mixture

Kingfish with Orange

  1. Mix ingredients together in a bowl and let sit to cure, top with fresh herbs
