Kingfish with Orange and Orange and Olive Oil Cake

Olive Oil Cake
- Sugar 300g
- Eggs 3pcs
- Milk 250g
- Extra Virgin olive oil 250g
- Orange juice + zest 3pcs
- Flour 300g
- Baking powder 15g
Kingfish with Orange
- 200g kingfish sliced
- 75ml orange juice
- 1 tbsp olives, sliced
- 1 spring onion, finely sliced
- 1 green chili, sliced
- 1 tbsp coconut vinegar
To serve
- Fresh herbs, dill & mint
Method:
Olive Oil Cake
- Whisk sugar and eggs until fluffy.
- Add in milk, olive oil, orange juice and zest alternately with dry ingredients.
- Bake at 160⁰c for 30 minutes.
- Optional: glaze with icing sugar mixture
Kingfish with Orange
- Mix ingredients together in a bowl and let sit to cure, top with fresh herbs
