My Mum's Pipis

Khanh Ong

Ingredients:

  • 1 tsp veg oil
  • 3 cloves of garlic crushed
  • 1.5 kgs pipis
  • 2 long red chilis sliced
  • 1⁄4 cup of thai basil leaves
  • 2 tsp oyster sauce
  • 1 tsp caster sugar

To Serve (Garnish):

  • thai basil tips
  • sliced chili

Method:

  1. In a wok add veg oil and garlic, cook for 30 seconds
  2. pour in the pipis and give it a quick mix.
  3. add the rest of the ingredients reserving half the chilis and basil
  4. cover with a lid and let it steam for 2-4 minutes.
  5. remove lid and toss the pipis.
  6. top with remaining chili and garlic
